Carford Group has installed a kitchen at Avon View, Dorset County Council's spacious new care home providing accommodation for up to 80 residents in Christchurch. | The home provides 25 nursing beds, 25 frail elderly beds, and 20 special care beds for people suffering from dementia; there is also a 10-bed Intermediate Care Unit (with its own entrance) providing short term rehabilitative care for people being discharged from hospital and in some cases preventing avoidable hospital admission.
This environment provides special challenges to the cook manager Jayne Horrill and her ten catering staff. Hot meals are served from hot food service trolleys to the residents in their unit dining rooms.
Dorset County Council selected Carford Group to design and install a generously-equipped kitchen that supports this service, which is organised for maximum space around a central cooking area equipped with two 6-burner ranges, a double fryer, salamander grill and no less than four separate ovens.
It also has a walk-in freezer room, double-door upright refrigerator and refrigerated counters.
Carford fitted special air ducting because the air extracted by the very large canopy had to be moved through a duct in a 'letterbox-size' hole up through the building - as did replacement air. |
