Beating queues at Oxford University Press

World-famous publisher Oxford University Press called on commercial catering equipment specialist Carford to help redesign a restaurant servery to beat queues.

Ferndown-based Carford helped contract caterers Catermaster design the end result which not only solved the queuing problem but enabled a whole new food concept with the first UK installation of a special German front of house cooking system.

The 12 year-old restaurant at Oxford University Press had been suffering from old-fashioned single-line counters and Catermaster¹s senior operations manager Graham Olds wanted both a fresh look and a solution to the queue problem.

The result was achieved by replacing the counter with four new counters and a module with two till points.

This dispersed the crowd of customers to enable them to make a non-pressured food selection and it created more space to avoid queues.

The Varithek front of house cooking system, from German manufacturer Rieber, allowed Graham to break away from traditional counter food - cooked elsewhere and kept warm at the servery - to a whole new style that included the chef¹s special being cooked in front of the customers using a griddle unit and induction oven.
