Expanding a Kitchen for Top London Restaurant Maggiore's... while it remained open for business

The Case

Maggiore's Multi award-winning Maggiore's restaurant in Covent Garden needed to expand it kitchen to serve both its main restaurant and a new private dining restaurant upstairs. This would take design, installation and substantial alterations to their existing basement kitchen... but Maggiore's did not want to close for business.
Maggiore's serves modern French cuisine. It boasts two AA rosettes, is Michelin-rated two knives and forks and aims to gain its stars soon.
It has one of the largest wine lists in the UK and was awarded Wine Spectator's 'Best of Award of Excellence' in 2004.
 
Owner Paul Corrett describes the restaurant as a country restaurant in the city and styled the dining room to resemble an Italian courtyard, with flagstone flooring and overhead skylight surrounded by climbing branches.

The Solution

The £100,000 contract involved substantial alteration of the existing basement kitchen to virtually double its size.
The biggest challenge was to handle the refurbishment while the restaurant remained open. Carford's solution involved working out of hours and using special screens to divide the kitchen into sections, each fitted with temporary
air extraction.

We designed the kitchen around a central Bonnet Premier cooking range and supplied customised fabrication of extraction, benches, sinks and shelves from its in-house operation.


The Result

The transition could not have gone more smoothly and the kitchen continued to produce its high-standard food right through the process.
