Whitley Ridge Hotel - The New Forest
Le Poussin at Whitley Ridge run by husband and wife team Alex and Caroline Aitken. Having gained its Michelin star in 1994 Le Poussin has had several locations and currently resides at Whitley Ridge. A former Royal Hunting Lodge built in the 18th century, this 20-bedroomed Georgian house is set in 14 acres of secluded grounds near Brockenhurst in the New Forest.
"We've been spending money on refurbishing the house since we moved in" comments Alex "and it was time we looked at the kitchen." The philosophy and driving force behind the kitchen refit was to look at the efficiency of the kitchen team and install as environmentally friendly and energy saving equipment as possible."


Alex added "After meeting with the Carford team and visiting several kitchens I saw induction and plancha cooking as the way forward. Initially the concept of a 'cool kitchen' was difficult to interpret and I spent an age looking at different induction concepts. ","Ultimately the stove we've ended up with is incredible."
The suite comprises a compact island tabletop arrangement (no ovens) incorporating 2 x 4 zone 14kW induction hob; 1 x 2 zone 'Plaque Athanor' plancha and 2 x 1/2GN multi-cooker. The design is incredibly flexible giving plenty of production space and heat sources for mise en place and then precision cooking (using the induction / plancha and multi-cookers) during service. The pass includes the new Hatco QTS-1 electric salamander, which is equipped with a plate detection switch, which automatically activates the heating elements, once the plate comes in contact with the grilling plate bar.
